This is an introduction to a recipe that recreates Saeki Ramen from Koran, a ramen shop that represents Saiki City, Oita Prefecture.
Koran 's Saeki Ramen is a pork bone Shoyu flavored ramen with just the right amount of Shoyu sauce, characterized by a soup that is high in fat and salt and packs a punch. The fat layer is thick and the richness is noticeable, but Shoyu sauce sauce gives it a sharp, clean flavor. The restaurant's greatest feature is the garlic powder! This stimulates the appetite, making it an addictive bowl that has many Ramen lovers and repeat customers flocking from all over the country.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Koran 's Saeki Ramen.
How to make Koran soup

Soup 1
・Water…10ℓ
・Knuckle...2kg
・ Pork backbone...500g
Soup 2
・Water…10ℓ
・ Dried sardine...100g
・Bones from cooking soup ①
・ [Commercial Use] Rich Pork White Soup (CP-B10) …2kg
How to make Koran
- Add the ingredients for soup ①, cover, and simmer over high heat, adding water as you go, for 8 hours.
- For soup ②, add Dried sardine and water to the soup cooked in step 1, cover and simmer over high heat for 8 hours.
- Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
- Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add the frozen Rich Pork White Soup (CP-B10) and dissolve over low heat.
- Mix soup ① and soup ②, adjust the concentration and it's done.

- [For commercial use]"Koran" Replica Soy Sauce...35g
- [Commercial use] Pure lard...20g
- Medium-thick straight noodles...1 ball
- [For commercial use] Pork belly...appropriate amount
- Bean sprouts...appropriate amount
- Green onion...appropriate amount
- White sesame seeds...appropriate amount
How to make it
- [For commercial use] Dissolve the thick pork white soup (CP-B10).
- Add water to the pork clear soup and chicken clear soup to dilute.
- Add lard, seasoning, and soup to a warmed bowl.
- Finally, add the noodles and toppings to complete the dish.

History and origins
Fujiwara Rairaken, founded in the 1960s, and Koran, founded in 1976, are said to be the originators of Saiki Ramen. With fishing and shipbuilding thriving in the area, there is a lot of sweaty work, and it is said that this Ramen became popular due to the need to replenish salt. People often sprinkle pepper on top of Ramen soup.
