Introduction

This is a recipe that recreates Sapporo Miso Ramen a local noodle representative of Sapporo, Hokkaido. Sapporo Miso Ramen was inspired by Miso. The idea behind this new Ramen was to create a nutritious Ramen with plenty of vegetables. Because the base is Miso, Sapporo Miso Ramen allows you to freely choose your favorite toppings. Another unique feature is the lard coating on the surface of the soup, allowing you to enjoy the hot soup right to the end, even on cold days. The rich flavor is rich and full of flavor, and the more you eat it, the more addictive it becomes. This recipe uses commercial Ramen soup to easily recreate the taste of Sapporo Miso Ramen, a local noodle.

・ Katsuobushi...100g
・Dashi Kombu …..20g
・ Onion...100g
・Carrots...50g
・ Ginger...20g

How to make Sapporo Miso Ramen

  1. Simmer ingredients ① over high heat for about 7 hours.
  2. Simmer ingredients ② over high heat for about 1 hour.
  3. Mix ① and ② and simmer for about 1 hour.
  4. Once the ingredients have started to break down, add the [Commercial Use] Pork Clear Soup (CP-BC6) to create the base flavor and it's done.

History and origins

Minced meat, bean sprouts, and Onion are fried in lard, then a small amount of Ramen soup and Garlic is added, and the dish is seasoned with a Miso base (containing over 10 types of spices) and Umami seasonings.
The toppings include the stir-fried vegetables, bamboo shoots, chopped green onions, sesame seeds, and a generous amount of Garlic, but the ramen is delicious without Garlic smell. Sapporo Ramen is also characterized by Garlic, Ginger, and hot lard, and the development of a Ramen culture unique to Hokkaido that both energizes and warms the body can be seen.
