How to make Motomura

  1. For soup ①, carefully prepare Pig head, cover it, and simmer it over high heat, adding water, for 8 hours.
  2. To make soup ②, add water to the cooked soup ① and cook again for 8 hours.
  3. To make soup ③, add water to the cooked soup ③ and cook again for 8 hours.
  4. As soup ① sits for a while and begins to Oxidation, add the frozen [Commercial Use] Rich Pork White Soup (CP-B10) and slowly dissolve over low heat to adjust the flavor.
  5. Combine the three types of soup you have made and adjust to your desired consistency.

History and origins

Motomura, which can be said to be representative of Saga Ramen, is Ramen shop opened by Kimura Toshimitsu after training for five years at Ikkyuken Nabeshima, a popular Ramen shop run by a relative. In 1980, it was discovered that Saga Ramen has its roots in Kurume Ramen, and Sanku Ramen Ramen Ramen also said to be the origin of tonkotsu ramen. Sanku Ramen in Saga opened in 1956, and it was there that Kimura trained at Ikkyuken. Ramen bowl is characterized by a generous amount of Ramen soup, soft noodles, a raw egg, and seaweed on top.
