History and origins
This popular Miso Ramen restaurant opened its flagship store in Ikebukuro in 2010, followed by a second store in Ueno in 2011, one year after its founding. Its convenient location, just a six-minute walk from the east exit of Ikebukuro Station, is a plus. Ramen 's distinctive flavor is an incredibly rich broth, made by slowly simmering Pork knuckle, chicken bones, and maple leaves, followed by pork trotters and back fat. The combination of Red Miso and Miso creates a rich yet mild flavor. The addition of Onion and carrots, sautéed until soft and tender, adds a touch of vegetable sweetness, creating a unique flavor. This incredibly popular restaurant is always mentioned when talking about Miso Ramen in Ikebukuro, and there's always a line out the door. However, thanks to the fast turnover, you can usually expect to be able to enter with a wait of only 15 to 30 minutes.
