Introduction
Gifu Tanmen, which has stores mainly in Gifu and Aichi prefectures, is popular with a wide range of customers. Its signature dish, Gifu Tanmen, is different from the typical tanmen of the Kanto region in that it is made with pork, Chinese cabbage, Cabbage, and Garlic, and is combined with a salt-based soup to create a simple yet flavorful tanmen!
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Sugakiya Ramen.
How to make Gifu Tanmen at "Sugakiya"
Sugakiya 's ingredients
- Chicken and pork mix soup (CP-B6)... 60cc
- 水…240cc
- Extreme salt...30cc
- Pure lard...20cc (B fat)
- Thin flat noodles (Tsukemen 14)... 1 ball
- Doubanjiang...to taste
- Cabbage...appropriate amount
- Chinese cabbage…appropriate amount
- Pork…appropriate amount
How to make Sugakiya
- Put the chicken and pork soup mix and water into a pot and bring to a boil over medium heat.
- Bring water to a boil in another pot and cook the noodles. Once cooked, drain the noodles.
- Put the pure lard, extra salt, soup, and noodles into a bowl.
- Top with doubanjiang, Cabbage, Chinese cabbage, and pork and it's done!
