Introduction
Haruki, a famous Michelin-starred restaurant, opened in 2016. This time, we'll be introducing their Seafood Dashi Ramen! The soup, made with a delicate seafood broth, has a smooth texture and a gentle flavor. The thick, meaty pork slices are also excellent, and although they're voluminous, they're surprisingly tender and fall apart! How to make "Haruki" Seafood Dashi Ramen noodles
Haruki 's Materials
- 鶏豚mixスープ(CP-M6)…150㏄
- Mackerel stock...150cc (1 pack of stock for 2.5 liters of water, 20 minutes on medium heat)
- Seafood flavored oil...20cc
- Yamataka Light Shoyu...25cc
- Special noodles #16...1 ball
- 1 sheet of nori seaweed cut into 6 pieces
- 1 flavored soft-boiled egg
- Pork belly chashu (without grill)... 2 slices
- Mizuna (potherb mustard greens)...appropriate amount
- Green onion...appropriate amount
How to make Haruki
- Put the chicken and pork mix soup and horse mackerel stock into a pot and bring to a boil over medium heat.
- Add water to another pot, bring to a boil, and cook the noodles. Once cooked, drain the noodles.
- Add seafood flavored oil, Yamataka light Shoyu, soup, and noodles to a bowl.
- Garnish with seaweed, egg, roasted pork, mizuna, and green onions and it's done!
