How to make it

  1. [For commercial use] Dissolve the pork clear soup (BC6).
  2. Add one dashi pack to 3 liters of water and boil over medium heat for 20 minutes to make a dried dashi stock.
  3. Put the lard and seasoning into a warmed bowl and pour in the soup.
  4. Finally, add the noodles and toppings to complete the dish.

History and origins

Tanaka Soba-ten was born as a second brand derived from Tanaka Shoten, a renowned ramen shop in Tokyo's Adachi Ward. Tanaka Shoten, founded in 2000, specializes in rich tonkotsu Ramen, but Tanaka Soba-ten was born from the desire to offer a bowl of ramen that can be enjoyed more casually and on a more everyday basis. The concept is "casual country Ramen." Based on Kitakata Ramen, the restaurant combines a clear tonkotsu soup with a salt sauce to create a gentle yet rich flavor. The noodles are flat, curly, and highly hydrated, resulting in a chewy texture. In addition to the classic chuka soba, limited-edition dishes such as Yamagata Miso Ramen and chilled chuka soba are also popular. While rich ramen is the norm, Tanaka Soba's Light taste yet satisfying flavor is popular with a wide range of customers, and each location has become a beloved "everyday bowl" in the community. The nostalgic, warm flavor is Tanaka Soba-ten 's greatest appeal.
