[Perfect Reproduction] A recipe that recreates the professional taste of Ippudo 's classic Karakama noodles

How to recreate Ippudo 's spicy noodles

Introduction

Introducing Ippudo 's Karakama noodles.
"Karakamen" is Ramen that combines spicy mala and meat miso. You can choose from two levels of spiciness (normal and extra spicy), and the deliciously spicy soup is garnished with "sesame bombs"! As you eat, the sesame will dissolve in the soup and change into a flavor similar to dandan noodles, so you can enjoy eating it all.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Ippudo-style dry noodles.

History and origins

It was first created in Fukuoka City in 1989 at the request of a regular customer at Ippudo Daimyo Honten, and is now the restaurant's signature dish. In Fukuoka, where tonkotsu Ramen is the norm, this bowl, topped with homemade chili oil and spicy meat miso, was originally served as a simple Ramen. Over the years, the noodles and toppings have been updated to create the flavor we know today.
In 2020, to commemorate the 35th anniversary of its founding, the "Goku Karakama Noodles" were released. They are even spicier than the traditional Karakama Noodles, and not only are they spicy, but they also have an exquisite balance of Umami and sweetness! The noodles have also been changed from thin noodles to flat noodles, which allow the soup to soak up the flavor and create just the right balance in your mouth.
