Introduction
Shikairo is a Chinese restaurant representing Nagasaki Prefecture, founded in 1899 by its first owner, Chin Heijun.
Shikairo is said to be the birthplace of Nagasaki champon, and is famous for being the first to use pork bone broth. The soup is a double broth made by combining chicken bones and pork bones, and is characterized by a mellow, odorless broth. Shikairo is said to be the first restaurant in Japan to use pork bones in its soup, and it is said that the Kyushu Pork bone broth culture that is representative of Hakata spread from this restaurant.
As you'd expect from the original restaurant, the soup is made with authentic chicken and pork bones, simmered for a long time until the bones break down and the thick, creamy texture develops. How to make Nagasaki Champon at Shikairo
Soup ingredients
- Water…10ℓ
- Pork backbone...4kg
- Chicken bones...2kg
- Back fat...1kg
- Maple leaves...1kg
- [Commercial Use] Chicken and Pork White Soup (CP-M6)... 6kg
- 生姜…1g
- Green onion...200g
How to make soup
- Put water, Pork backbone, chicken bones, back fat, maple leaves, Ginger, and green onions into a pot and simmer over high heat for 4 hours.
- Remove any scum that appears along the way.
- Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
- Once the bones have been broken down, they will form the base of the flavor. [For commercial use] Add the frozen Chicken and Pork White Soup Soup (CP-M6) and dissolve over low heat.

Ingredients (for 1 cup)
- [Commercial Use] Chicken and Pork White Soup (CP-M6)... 150cc
- 水…150cc
- [For commercial use] "Shikairo" Replica Kaeshi...43g
- Champon noodles...1 bowl
- Thinly sliced pork belly... 60g
- Kamaboko (or chikuwa) ... 30g
- Peeled shrimp... 4 to 6 pieces
- Squid (sliced) ... 40g
- Cabbage... 80g
- Bean sprouts ... 50g
- 1/4 Onion
- Carrot... 30g
- Wood ear mushrooms (soaked) ... a little
- Corn...a little (to taste)
How to make it
- Heat Wok and add lard. Stir-fry everything except Cabbage and bean sprouts over medium heat. Add Cabbage and bean sprouts just before they are completely cooked through.
- [For commercial use] Dilute the chicken and pork white soup (CP-M6) with water and add it.
- Add the seasoning.
- Add the noodles.
- Finally, simmer the ingredients until the noodles loosen and start to float to the top.
