How to make "Nakiryu" dandan noodles

This is a recipe that recreates the dandan noodles style of "Nakiryu" located at Shin-Okubo Station in Tokyo.
The tantanmen noodles at this star-winning Ramen restaurant are sure to please. The soup has a perfect balance of sourness and spiciness, and the smooth, ultra-thin noodles are addictive. The chunky minced meat adds a nice touch, and you'll finish the bowl in no time.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of "Nakiryu" style dandan noodles.

Animal soup
- Water…40ℓ
- Knuckles...10kg
- 2 whole chickens
- [Commercial Use] Pork Clear Soup (CP-BC6)... 8kg
- 玉ねぎ…250g
- Garlic...30g
- Green onion head...100g
- Dried urume flakes...200g
- Thick bonito flakes...60g
Seafood soup
- Water…3ℓ
- 昆布…90g
- Katakuchi Dried sardine...120g
- 干し椎茸…30g
How to make soup
- To make animal soup, fill a pot with water, arrange Pork knuckle at the bottom, add the whole chicken, and heat.
- Keep the temperature at 90°C and heat for 3 hours, then add Aromatic Vegetables and dried ingredients.
- After heating for 1 hour (keep at 90°C), add the seafood soup and heat for another hour (keep at 90°C) before turning off the heat.
- Once the bones have been broken down, they will form the base of the flavor. [For commercial use] Add frozen pork clear soup (CP-BC6) and dissolve over low heat.
- Once the frozen soup has thawed and the flavors have blended well, it is ready.
- To make the seafood soup, steep the day before, then turn the heat up to 70°C the next morning, reduce the heat, and keep it at 70°C for an hour, then remove Kombu.
- Mix the animal soup and seafood soup in a 4:1 ratio to complete the dish.

- [Commercial use] Chicken clear soup (CP-TC4)... 100cc
- [Commercial Use] Dried Dashi Pack...50cc
- [Commercial use] Kombu stock...50cc
- 水…50cc
- [For commercial use] "Nakiryu" replica seasoning...50g
- 芝麻醤…20g
- Sichuan chili oil...20cc
- Chinese noodles #24...1 ball
- Meat Miso...50g
- Chopped green onion...5g
- 青ネギ…10g
How to make it
- Dissolve [Commercial Use] Pork Clear Soup (CP-BC6) and [Commercial Use] Chicken Clear Soup (CP-TC4).
- In 2 liters of water, [For commercial use] Add one bag of dried fish stock and boil for 20 minutes to make dried fish stock.
- Use 10g to 20g of Kombu for every 1 liter of water. Add the water and bring it to a boil just before boiling, and Kombu is ready.
- Combine clear pork soup, clear chicken soup, dried stock, and Kombu stock.
- Pour the soup, which has been mixed with the seasoning and oil, into a warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
It opened in Shin-Okubo Station, Tokyo in May 2012. After graduating from a culinary school, founder Saito worked at a hotel in Tokyo before joining Chabuya to learn how to make noodles. He also served as head chef at MIST, a second brand of Chabuya.
The restaurant's signature dish, "Dandan Noodles," has been awarded a star, a rare award for a Ramen restaurant, as it is an authentic Hong Kong-style dish that has been refined at "MIST." Customers are constantly captivated by the balance of spiciness and sourness. There is also a wide selection Side dishes, so be sure to try them.
