Soup ingredients

Animal soup

Dry food soup

  • Water…5ℓ
  • 昆布…120g
  • Souda thin shavings of dried bonito...300g
  • Dried urume flakes...300g

How to make soup

  1. Place the chicken backbone at the bottom of a pot, add the chicken bones, add water and heat over high heat.
  2. Once it reaches 80°C, reduce the heat to medium and heat up to 90°C.
  3. When scum appears, remove it and keep the temperature at 90°C and heat for 4 hours.
  4. To make the dried food soup, steep in water for 3 hours, then put the pot on the stove and remove Kombu when it boils.
  5. After 3 hours, add water stock, dried bonito flakes, and dried urume flakes to the soup and it's done.
  6. Add the dry soup and heat at 90℃ for 1 hour, then turn off the heat and add the base of the flavor. [For commercial use] Add frozen chicken clear soup (CP-TC4) and dissolve over low heat.
  7. Once the frozen soup has thawed and the flavors have blended well, the soup is ready.
