This is a recipe that recreates Chuka Soba Yotsuba soba that is representative of Kawajima Town in Saitama Prefecture.
The sparkling golden soup is made with a slow-brewed stock made primarily from Hinai Jidori (local chicken), and when you put it in your mouth, the delicious aroma of the chicken stock fills your nose, giving it a very elegant taste.
The pink pork slices add a touch of color, making this a dish that is a feast for the eyes and the tongue.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Yotsuba soba, similar to "Chuka Soba Yotsuba."
How to make "Chuka Soba Yotsuba"
Soup ingredients
- Water…40ℓ
- Jidori (local chicken) (Hina, Amakusa Daio, Hakata Jidori (local chicken)) *1...3 chickens
- Parent chicken galah*2...10kg
- Pork shoulder fat...all
- Parent chicken visceral fat...1.5kg
- 昆布…200g
- [Commercial Use] Chicken Clear Soup (CP-TC4)... 5kg
How to make soup
- *1 For Jidori (local chicken), Knife into the thick part of the meat from the skin side to make it easier to extract the broth.
- *2 Clean the internal organs of the shell under running water.
- Pour water into a pot, place chicken bones at the bottom, and add the whole chicken.
- Heat over medium heat, and once the temperature reaches 95°C, reduce the heat to low and keep it at 95°C.
- If scum appears, remove it, but there is no need to stir with a spatula.
- After 2 hours, collect the floating chicken oil.
- Add the visceral fat and cook for another 2 hours, then collect the chicken oil, add Kombu and cook for another 1 hour.
- Once the meat releases its broth, it becomes the base of the flavor. [For commercial use] Add frozen chicken clear soup (CP-TC4) and dissolve over low heat.
- Once the frozen soup has thawed and the flavors have blended well, the soup is ready.

- [For commercial use]"Four Leaf Clover" Replica Soy Sauce...35g
- [For commercial use] Domestic chicken oil...20g
- Medium-thick straight noodles...1 ball
- Rare pork...appropriate amount
- Bamboo shoots...appropriate amount
- Mitsuba...appropriate amount
- [For commercial use] Nori seaweed cut into 8 pieces...appropriate amount
How to make it
- Dissolve [Commercial Use] Pork Clear Soup Soup (CP-BC6) and [Commercial Use] Chicken Clear Soup Soup (CP_TC4).
- Use 10-20g per 1L of water. Add to the water and bring to a boil to make Kombu stock.
- Combine pork clear soup, chicken clear soup, and Kombu stock.
- Add chicken oil, seasoning, and soup to a warmed bowl.
- Finally, add the noodles and toppings to complete the dish.
