How to make "Hikage" Shin-Kawasaki Ramen

Hikage materials

  • Water...550g
  • 25g Kombu
  • Dried shiitake...5g
  • Nitto Brewing Shiro Soy Sauce...700g
  • Salt...80g
  • Fish Sauce...50g
  • Alcohol…100g

How to create Hikage

  1. Steep overnight in water and dried ingredients (Kombu, shiitake mushrooms, Dried sardine sardines, mackerel)
  2. Put the dried ingredients and water stock in a pot and heat it. Once it boils, remove Kombu.
  3. Add the liquid seasoning, heat again, and when it boils, turn off the heat and strain (remove the dried ingredients).
  4. Add salt and mix well to dissolve. Let sit for about 2 days and it's done.

History and origins

Located near Shin-Kawasaki Station in Kanagawa Prefecture, the somewhat unusually named "Hikage" is a small Ramen shop with seven seats at the counter. Since opening in 2021, the shop has been run by the owner alone and is extremely popular, with queues always forming.
This bowl of ramen conveys the fact that a lot of effort has gone into not only the soup but also the noodles. The chewy noodles have a springy texture, almost like tapioca pearls, and are satisfying to chew, so you can enjoy the texture just by eating the noodles.
The minced meat rice bowl with Ginger is also a popular menu item.Everything on the menu is a little different, making this a one-of-a-kind Ramen shop.
