How to make "Hikage" Ramen
Soup ingredients
- Water…15ℓ
- Minced chicken (thigh meat)...2kg
- Pork belly (7cm width)...6kg
- [Commercial Use] Pork Clear Soup (CP-BC6)... 5kg
- Dried sardines (white Dried sardine)...250g
- Mackerel flakes...100g
How to make soup
- Put the minced chicken and 500g of water into a bowl and stir to form a paste.
- Pour water into a pot, add the minced chicken, and turn on the heat (medium heat).
- The minced meat will sink to the bottom, so scrape the bottom of the pot occasionally to mix.
- When scum appears, remove it promptly.
- Once the mince floats, add the pork belly.
- Increase the heat once, remove the scum, and bring to a boil again, then reduce the heat to a slight boil.
- After that, cook for 90 minutes, remove the pork belly, lightly sear the surface, and then marinate it in the char siu sauce.
- Remove the minced chicken and use it for the Ginger rice bowl.
- Add Dried sardine and mackerel flakes and simmer for about 40 minutes over low heat, but do not bring to a boil.
- Collect the floating oil.
- Once the flavor of the meat has seeped out, it will become the base of the flavor. [For commercial use] Add frozen pork clear soup (CP-BC6) and dissolve over low heat.
- Once the frozen soup has thawed and the flavors have blended well, the soup is ready.

- [Commercial use] Chicken clear soup (CP_TC4)... 150cc
- [For commercial use] Dried fish stock pack...50cc
- [For commercial use]"Hikage" reproduction seasoning...35g
- [For commercial use] Domestic chicken oil...20g
- Extra thick straight noodles...1 ball
- [For commercial use] Pork belly...appropriate amount
- Green onion...appropriate amount
How to make it
- Dissolve [Commercial Use] Pork Clear Soup Soup (CP-BC6) and [Commercial Use] Chicken Clear Soup Soup (CP_TC4).
- Add one dashi pack to 2 liters of water and boil over medium heat for 20 minutes to make a dried fish stock.
- A combination of clear pork soup, clear chicken soup, and dried fish stock.
- Add chicken oil, seasoning, and soup to a warmed bowl.
- Finally, add the noodles and toppings to complete the dish.

Located near Shin-Kawasaki Station in Kanagawa Prefecture, the somewhat unusually named "Hikage" is a small Ramen shop with seven seats at the counter. Since opening in 2021, the shop has been run by the owner alone and is extremely popular, with queues always forming.
This bowl of ramen conveys the fact that a lot of effort has gone into not only the soup but also the noodles. The chewy noodles have a springy texture, almost like tapioca pearls, and are satisfying to chew, so you can enjoy the texture just by eating the noodles.
