- Water…30ℓ
- Knuckle (half cut)...8kg
- Pork backbone...2kg
- Back fat...1kg
- [Commercial Use] Rich Pork White Soup (CP-B10)... 6kg
How to make soup
- Place the knuckle in a pot, then the spine on top and heat over high heat.
- Once it starts to boil, scum will appear, so reduce the heat to medium and remove it frequently.
- Measure the water level, close the lid slightly to allow steam to escape, and heat for 2 hours.
- Open the lid, add hot water to the original level, cover and simmer again for 2 hours.
- Add hot water to bring the water level back up to the original level, add the back fat, cover and heat for 2 hours.
- Open the lid and mix well by placing the tip of a spatula against the bottom of the pot.
- Once the water level has returned to its original level, turn the heat to high and open the lid every 10 minutes, stirring well for 2 hours.
- Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add the frozen Rich Pork White Soup (CP-B10) and dissolve over low heat.
- Once the frozen soup has thawed and the flavors have blended well, the soup is ready.

- Water…175cc

How to make it
- Pour the thick pork soup into a pot and bring to a boil over medium heat.
- Bring water to a boil in another pot and cook the noodles. Once cooked, drain the noodles.
- Put genuine lard, Ichiran-style seasoning, soup, and noodles into a bowl.
- Top with pork fillets, green onions, and spicy miso and you're done!

Founded in 1960, Ichiran, with its base in Fukuoka Prefecture and branches nationwide, is where the Nakaharas developed their legendary flavor. The legendary red secret sauce topping the soup is said to have originated at Hourin. A unique blend of dozens of Chili Pepper, Aging for days, creates a truly one-of-a-kind flavor. Surprisingly, the "100% tonkotsu-free Ramen" broth is a natural tonkotsu broth made without pork, using a variety of chicken-based ingredients to slowly extract Umami. No seasonings are used.
