How to make soup
- Put the knuckles on the fire with water, bring to a boil, then discard the water. Wash the blood off the knuckles under running water to remove any unpleasant animal smell.
- Add chicken bones, maple leaves, and knuckle bones to the water and simmer over low heat, carefully removing any scum.
- Add Onion and Ginger and cook for 20 minutes.
- Add Dried sardine and simmer for 3 hours.
- Add the dashi Kombu and simmer for 1 hour.
