[Perfect Reproduction] A recipe that recreates the professional-quality Niboshi Ramen from "Noodle Stand"

How to recreate "Noodle Stand Tokyo"
Introduction
This is a recipe that recreates the professional-quality flavor of Noodle Stand's Niboshi Ramen. Noodle Stand's Niboshi Ramen has a nostalgic, old-fashioned Chinese noodle flavor that's so delicious you'll want to eat it again and again. The umami of the Dried sardine broth is refined, and the crisp aftertaste of Shoyu makes it a simple yet highly addictive bowl. This is a recipe that uses commercial Ramen soup to easily recreate the flavor of Noodle Stand's Niboshi Ramen.
Soup ingredients
Animal soup
- Water…10ℓ
- Knuckles...2kg
- Chicken bones...2kg
- [Commercial Use] Pork Clear Soup (CP-BC6)... 2kg
- Maple leaves...1kg
- 2 roasted Onion
Dried sardine soup
- Water…5ℓ
- Dried sardine sardines...200g
- Katakuchi Dried sardine (white sardines)...100g
- Katakuchi Dried sardine...100g
How to make soup
- Make animal soup. Heat the knuckles with water, bring to a boil, then discard the water. Wash the knuckles again under running water to remove any blood and any unpleasant animal smell.
- Put the water and pork bones into Pressure Cooker and cook under pressure for 1 hour.
- After releasing the pressure, add the maple leaves that have been parboiled to remove the odor, chicken bones that have been soaked in water for half a day to Blood removal, and Onion, and cook under pressure for 1 hour.
- Turn off the heat and let the pressure drop for 2 hours, then open the lid. Cook over high heat, stirring frequently with Wooden spatula to prevent the bottom from burning.
- Finally, add the [Commercial Use] Pork Clear Soup (CP-BC6), which will form the base of the flavor, and heat and mix until the flavors are well blended.
- Make Dried sardine soup. Place the flat Dried sardine, katakuchi Dried sardine (white sardines), and katakuchi Dried sardine in a pot. Add enough water to cover the ingredients, and let steep overnight.
- The next morning, reduce heat to low and cook for 20 minutes.
- Cool the soup and strain it thoroughly to make Dried sardine soup.
- Mix animal soup and Dried sardine soup in a 1:2 ratio to complete.
