You can choose between "Blue," characterized by its mellow aroma, and "White," characterized by its rich Umami. Dried sardine Niboshi Ramen has a smooth texture and is very easy to drink. The elegant richness is complemented by the slightly bitter Umami of Dried sardine, making for a truly delicious bowl. This is a recipe that uses commercial Ramen soup to easily recreate the flavor of Parishion's Niboshi Ramen.

Soup ingredients

  • 水…10ℓ
  • 鶏ガラ…2kg
  • Maple leaves...1kg
  • Dried sardine...2kg
  • Dashi Kombu...100g
  • 鯖節…200g

How to make soup

  1. Put water, chicken stock, and maple leaves into Zundonabe and bring to a boil over high heat.
  2. Be sure to remove any scum that appears during cooking.
  3. Add Dried sardine and simmer over medium heat for 3 hours.
  4. Add the dashi Kombu and simmer for 2 hours.
  5. Finally, add Sababushi and simmer for an hour, then strain the soup thoroughly and it's done.

How to make it

  1. In a pot, [For commercial use] Dissolve the chicken clear soup (CP-TC4).
  2. Add one packet of dried stock to 2 liters of water and boil over medium heat for 20 minutes to make dried stock.
  3. Combine the soup and stock.
  4. Transfer to a warmed bowl and add the flavored oil and soup.
  5. Finally, add the noodles and toppings and it's done!
