Introduction
This is a recipe that recreates the professional-quality flavor of Menya Shishimaru's Dried sardine Shoyu Ramen. Menya Shishimaru's Dried sardine Shoyu Ramen perfectly combines the gentle Umami of dried fish with the slightly bitter flavor of Dried sardine. The crisp aftertaste of Shoyu sauce sauce eliminates the heavy taste, and the mellow sweetness adds to the highly refined soup. This is a recipe that uses commercial Ramen soup to easily recreate the flavor of Menya Shishimaru's Dried sardine Shoyu Ramen.
Soup ingredients
- Water…10ℓ
- Dried sardine fish...150g
- Katakuchi Dried sardine (white sardines)...150g
- Horse Dried sardine sardines...100g
- 羅臼昆布…75g
- Dried urume flakes...150g
- Mixed dried mackerel and horse mackerel...150g
How to make soup
- Rausu kombu, Dried sardine, dried katakuchi niboshi, and dried horse Dried sardine in water the day before, then put on the fire the next morning.
- Light the fire and remove Kombu when the water temperature reaches 60°C.
- Increase the heat further and when the water temperature reaches 90°C, add the dried urume and a mixture of dried mackerel and horse mackerel. (Note: The dried urume and mixed dried urume should be soaked in water for about 15 minutes before adding.)
- Keep the temperature at 90℃ and cook for about 15 minutes, then strain.

- [Commercial Use] Dried Dashi Pack...150cc
- 水…100cc
- [For commercial use] "Shishimaru" replica sauce...35cc
- [For commercial use] Dried sardine flavored oil...20cc
- [For commercial use] Zero noodles...1 ball
- [For commercial use] Pork shoulder loin...appropriate amount
- [For commercial use] Nori seaweed cut into 8 pieces...appropriate amount
- Green onion...appropriate amount
How to make it
- In a pot, [For commercial use] Dissolve the chicken clear soup (CP-TC4).
- Add one packet of dried stock to 2 liters of water and boil over medium heat for 20 minutes to make dried stock.
- Combine the soup and stock.
- Transfer to a warmed bowl and add the flavored oil and soup.
- Finally, add the noodles and toppings and it's done!
