How to recreate "Rokukan-do"
Introduction
「麺屋 六感堂」のグリーン麺を再現したレシピの紹介です。「麺屋 六感堂」のグリーン麺は、名前の通りグリーンの麺が特長のラーメンです。さっぱりした塩スープにパツンと噛み応えのいい麺が合わさり、サラサラと食べてしまうほどの軽やかさ。トッピングの刻み玉ねぎやチャーシューの香ばしさが非常に引き立ち、バランスの良い一杯です。「麺屋 六感堂」のグリーン麺の味を簡単に再現できるよう業務用ラーメンスープを使った再現レシピです。
Soup ingredients
- Water…5ℓ
- Katakuchi sardine Dried sardine...400g
- Hidaka Kombu...60g
- Mixed knots…150g
How to make soup
- Dried sardine the dried sardines and Hidaka Kombu in water overnight.
- Put Dried sardine and Hidaka Kombu into a pot along with the stock. Add more water and cook over high heat with the lid on.
- After about 30 minutes, when the temperature reaches 85-95°C, reduce the heat to low and add the mixed bonito flakes.
- Add the mixed dried fish and after 8 minutes, remove the basket.
- Strain the soup well and it's done.

Ingredients (for 1 cup)
- [Commercial use] Chicken clear soup (CP-TC4)... 50cc
- [Commercial use] Dried dashi pack...250c
- [For commercial use] "Rokukando" Replica Soy Sauce...35cc
- [For commercial use] Green noodles (※1)... 1 ball
- Rare chicken char siu...appropriate amount
- Thinly sliced bamboo shoots...appropriate amount
- Green onion...appropriate amount
- Onion...appropriate amount
*1...Green noodles can be reproduced by special order. Please contact us if you are interested.
How to make it
- In a pot, [For commercial use] Dissolve the chicken clear soup (CP-TC4).
- Add one dried stock packet to 2 liters of water and boil over medium heat for 20 minutes.
- Combine the soup and stock.
- Transfer to a warmed bowl and add the soup.
- Finally, add the noodles and toppings and it's done!
