This is a recipe that uses commercial Ramen soup to easily recreate the flavor of Menya Mahoroba's Niboshi Chuka Soba.
Soup ingredients
- Water…10kg
- Back fat...3kg
- Maple...3kg
- [Commercial Use] Rich Chicken and Pork White Soup (CP-JJJ)... 3kg
- Katakuchi sardine Dried sardine (2 types: white and blue)...2kg
- Garlic...1 clove
- 玉ねぎ…30g
- キャベツ…30g
- 生姜…30g
- Green onion head...100g
How to make soup
- Fill the dried Dried sardine with water and leave them in the refrigerator the day before to steep.
- Put water, back fat, and maple leaves into Pressure Cooker and heat.
- After 40 minutes, open Pressure Cooker lid and cook for an additional 40 minutes with the lid open.
- Strain the dried Dried sardine stock prepared the day before into the soup.
- Add sliced Ginger, halved garlic, Cabbage, Onion, and leek heads to the soup.
- Put Dried sardine residue into Blender and make a paste.
- Add the dried Dried sardine to the soup.
- Stir with Wooden spatula and bring to a boil over high heat.
- Reduce / Simmer for 3 hours and 30 minutes, or until the soup has reduced by about 2/3.
- Finally, add the [Commercial Use] Rich Chicken and Pork White Soup (CP-JJJ), which will form the base of the flavor, and let the flavors blend together.
- Once the frozen soup has melted and the flavors have fully blended, strain the residue through a chinois and it's done.

- Onion...appropriate amount
How to make it
- In a pot, [For commercial use] Dissolve the rich chicken and pork white soup (CP-JJJ).
- Add one dried stock packet to 2 liters of water and boil over medium heat for 20 minutes.
- Combine the soup and stock.
- Transfer to a warmed bowl and add oil and soup.
- Finally, add the noodles and toppings and it's done!
