Introduction

This is a recipe that recreates the Tsukemen from Ginza Hakuei. Ginza Hakuei's flying fish broth Edomae Tsukemen is an exquisite bowl of ramen packed with the mellow sweetness and richness of chicken broth and the umami of Edomae clams. The three types of char siu (roasted pork, wagyu beef, duck, and pork) are visually striking and are sure to be a hot topic! This is a recipe that uses commercial Ramen soup to easily recreate the taste of Ginza Hakuei's Tsukemen Edomae tsukemen.

How to make soup

  1. Wash the chicken bones and whole chicken thoroughly under running water to remove any blood from the surface.
  2. Fill a pot with water, add the maple leaves and chicken bones, and bring to a boil over high heat.
  3. Remove any scum that appears along the way.
  4. After 2 hours from boiling, add the whole chicken. When the soup boils again, reduce the heat, maintain the temperature at 90°C and simmer for 2 hours.
  5. After 2 hours, skim off the oil that has risen to the surface. This oil will be used as chicken fat later. Cook on low heat for another 3 hours.
  6. Finally, add the [Commercial Use] Chicken Clear Soup (CP-TC4), which will form the base of the flavor, and once the flavor has stabilized, turn off the heat and Chicken broth is ready.
  7. Pour one cup of Chicken broth into a saucepan, add the clams and bring to a boil.
  8. Add the sauce and chicken oil to the pot and heat until a single serving of soup is ready.

How to make it

  2. Add water to the soup to dilute it.
  3. Transfer to a warmed bowl and add oil, shellfish stock base and soup.
  4. Finally, add the noodles and toppings and it's done!
