How to make duck soup

  1. Remove the thigh and breast meat from the duck (this will be used separately for the char siu).
  2. Add the remaining ingredients and water from step 1 to a pot and simmer over medium heat for 6 hours.
  3. After boiling for 2 hours, mash the fish to release the flavor.
  4. After 5 hours from boiling, carefully scoop out the floating duck oil and transfer it to a separate container (this will be used as flavoring oil later).
  5. Finally, add the [Commercial Use] Chicken Clear Soup (CP-TC4), adjust the taste and concentration, and it's done.
