How to make Miyazaki Ramen at "Komurasaki"
Introduction
This recipe is a recreation of Miyazaki Ramen of "Komurasaki" representing Miyazaki City, Miyazaki Prefecture.
Miyazaki Ramen of "Komurasaki" features a simple Pork bone broth. It is a very easy to eat dish with no oily Light taste taste and very little odor.
Komurasaki This recipe uses commercial Ramen soup to easily reproduce the taste of the restaurant's Miyazaki Ramen.
How to make Komurasaki soup
Ingredients for Komurasaki
・Water…10ℓ
・Knuckle...2kg
・ [Commercial Use] Pork White Soup (CP-B8) …1kg
・ Onion...2 pcs
・Carrot…1 piece
・ Garlic...1 piece
・ Ginger...100g
・Green onion...1
How to make Komurasaki
- Boil the knuckles in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the drained blood knuckles into a pot and cook over high heat for 3 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
- Add the vegetables and continue to cook on high heat for 3 hours.

- Medium-thin noodles...1 ball

- Wood Ear Mushroom...appropriate amount
- Bean sprouts...appropriate amount
- Green onion...appropriate amount
How to make it
- [For commercial use] Dissolve the thick pork white soup (CP-B10).
- Make vegetable stock by boiling Onion, Carrot, Ginger, and garlic in water for 20 minutes.
- Combine rich pork broth soup with vegetable stock.
- Add the soup and rice to the warmed bowl.
- Finally, add the noodles and toppings to complete the dish.

History and origins
Founded in 1949, "Komurasaki" is said to be the first Ramen shop in Miyazaki Prefecture. Mr. Miyaji, the general of the army, opened a Ramen store after returning to Japan after learning how to make Ramen in Taiwan.
