How to recreate Beppu cold noodles at "Kogetsu"
Introduction
This is a recipe that recreates the Beppu Cold Noodles from Kogetsu, a restaurant that represents Beppu City, Oita Prefecture.
The cold noodles at "Kozuki" are made with a soup made mainly from Kombu and natural water, and Light taste elegant taste is simply delicious. The beautiful appearance makes it a feast for the eyes as well. The soup has a refreshing finish without any sourness, and it goes perfectly with the roasted pork slices made from beef.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Kogetsu's Beppu cold noodles.
Kogetsu homemade soup
Soup ingredients
・Water…2ℓ
・Dashi Kombu (kelp for soup stock)...40g
・ Beef shank...500g
・ [Commercial Use] Beef Clear Soup (CP-BC2)... 500g
How to make soup
- Make a stock using water and dashi Kombu.
- Simmer Beef shank in stock for about 2 hours.
- Once the flavor has been fully extracted from the bones, it becomes the base of the flavor. [For commercial use] Add frozen beef clear soup (CP-BC2) and dissolve over low heat.
- Once the frozen soup has thawed and the flavors have blended well, the soup is ready.
Ingredients for the simmered fish
・ Koikuchi Soy Sauce...30ml
・ Usukuchi Soy Sauce...30ml
・Salt...appropriate amount

- Mix all ingredients and chill.

- Cold noodles...1 bowl
- Beef…appropriate amount
- Boiled eggs...appropriate amount
- Green onion...appropriate amount
- White sesame seeds...appropriate amount
How to make it
- [For commercial use] Dissolve the beef clear soup (CP-BC2).
- Add water to the beef clear soup to dilute it.
- Add the soup and rice to the warmed bowl.
- Finally, add the noodles and toppings to complete the dish.

History and origins
Around 1950, after the end of the war, a chef who returned from Manchuria (Dalian) founded "Kogetsu," and it is said that he created a Japanese-style version of local cold noodles. Beppu cold noodles are characterized by three key features: chewy noodles made with buckwheat flour, homemade Cabbage kimchi, and beef chashu. They also tend to be made with Japanese-style broth (wafu dashi), and depending on the restaurant, thick noodles or medium-thin noodles are available. They are served in Ramen bowls rather than metal bowls. Along with Morioka cold noodles, they are one of the two major cold noodle styles.
