Introduction

Maruboshi Ramen 's Kurume Ramen is characterized by its soft, thick, and mellow Pork bone broth, with Umami of the broth and a punchy fat. It has almost no unpleasant odor or strong flavor, and the sweetness unique to pork bones comes through clearly, leaving a lingering sweet and mellow aftertaste.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Maruboshi Ramen 's Kurume Ramen.
How to make Maruboshi Ramen soup
Soup ingredients
・Water…15ℓ
・ Pig head...1kg
・Knuckle...1kg
・ Pork backbone...1kg
・Pig's feet...300g
・Chicken bones...1kg
・ [Commercial use] Chicken and pork white soup (CP-M6)... 3kg
How to make soup
- Cover and cook over high heat, adding water as needed, for 25 hours.
- Every two hours, take three portions of Ramen soup. Add bones (pork bones and chicken bones) while checking the condition of Ramen soup.
- Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
- Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add the frozen chicken and pork white soup (CP-M6) and dissolve over low heat.

How to make it
- [For business use] Pork clear soup (CP-BC6) [For commercial use] Dissolve the chicken and pork white soup (CP-M6).
- Add water to the pork clear soup and chicken and pork white soup to dilute.

History and origins
Founded in 1958, Maruboshi Ramen serves Ramen made with a whole pig 24 hours a day, 365 days a year. Its innovative business style and delicious Ramen are said to have captivated long-distance truck drivers, who are picky about the taste of Ramen, and made Kurume Ramen famous nationwide.
The founder, Gosaburo Hoshino, played a key role in increasing the number of Ramen fans and Ramen shops by securing land along a national highway, which was a key distribution point, and making Ramen during a period of great economic growth. Incidentally, according to the company history, Maruboshi Ramen was the model for the legendary hit product "Yatai Ramen" created in 1969 by Marutai, Kyushu's leading instant noodle manufacturer.
