Sanku Ramen 's Kurume Ramen is a type of Pork bone broth that is typically cloudy white paitan (white broth), but it is said that this cloudy white soup originated from Sanku Ramen. The unique paitan soup with its strong umami flavor quickly became a hot topic, and is said to have become established as Hakata Ramen today.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Sanku Ramen 's Kurume Ramen.

How to make soup

  1. Parboil the bones and Blood removal.
  2. Combine the ingredients in ①, cover and cook on high heat for 16 hours.
  3. Add pork knuckles and Pork backbone and simmer over high heat for 16 hours. Add back fat halfway through.
  4. ③ Add water and [Commercial Use] Rich Pork White Soup (CP-B10) and simmer over high heat for 6 hours.
  5. The pot is constantly turned to break down the bones while cooking.
  6. By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
  7. Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
