Introduction

Ichishinken's Kokura Ramen is a thick, slightly thickened Pork bone broth soup that looks like it has a strong flavor, but once you take a sip, you will be surprised to find that it has a very tasty and refreshing aftertaste. The restaurant also offers a variety of dishes that can be enjoyed by adding pepper to the soup.
This recipe uses Ramen soup for commercial use to easily reproduce the taste of Kokura Ramen, a "local gourmet" dish.

How to make Kokura Ramen soup

Ingredients for Kokura Ramen

Soup 1
・Water…5ℓ
・ Pork backbone...1.5kg

Soup 2
・Water…6ℓ
・Pork knuckles...1kg
・ Pork backbone...1.5kg
・Back fat...500g
[Commercial Use] Rich Pork White Soup (CP-B10)... 2kg

How to make Kokura Ramen

  1. Parboil the bones and Blood removal.
  2. Combine the ingredients in ①, cover and simmer over high heat for 6 hours.
  3. Add pork knuckles and Pork backbone and simmer over high heat for 6 hours. Add pork back fat halfway through.
  4. Add soup ② to soup ① and adjust to your desired consistency.
  5. Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add the frozen Rich Pork White Soup (CP-B10) and dissolve over low heat.
  6. Once the frozen soup has thawed and the flavors have blended well, the soup is ready.
