The Nagahama Ramen from Ganso Nagahama-ya has a soup that looks rich, but it is actually very Light taste and delicious, so much so that once you take a sip you will find yourself gulping it down without being able to stop.
The chopped pork filling is quite salty and tastes great when dipped in the soup, so this is a dish that we highly recommend trying together.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Nagahama Ramen from "Ganso Nagahama-ya."
How to make Ganso Nagahama-ya ya soup
Soup ingredients
・Water…10ℓ
・Pork knuckles...2kg
・ [Commercial Use] Pork White Soup (CP-B8)... 2kg
・ Garlic...2 cloves
How to make soup
- Put the bones in water and cook over high heat, skimming off any scum that comes out. Cover and continue cooking over high heat.
- Continue cooking for around 12 hours, maintaining the water level.
- Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
- Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add the frozen pork white soup (CP-B8) and dissolve over low heat.
- Once the frozen soup has thawed and the flavors have blended well, the soup is ready.

- Thin noodles...1 ball

How to make it
- [For commercial use] Dissolve the pork white soup (CP-B8).
- Add the soup and rice to the warmed bowl.

History and origins
Founded in 1955, Ganso Nagahama-ya opened the first Ramen store in the Nagahama area. Ramen was created Kae-dama for market workers, with extra-fine noodles that could be boiled quickly and to fill their stomachs. The menu was Ramen only, and it is said that some days as many as 3,000 servings were served in a day. This Ramen was opened by Sakakibara and his wife, who are of Taiwanese descent, but probably influenced by "Akaren" and others, since there is no cloudy Ramen soup in Taiwan.
