Chikuho Ramen Yamagoya 's Showa (old) Ramen is characterized by its rich Pork bone broth, which is made using only pork bones without any added ingredients. This is slowly simmered using a secret recipe that has been passed down since the restaurant's founding until it becomes cloudy, resulting in a soup that is rich in the flavor and depth of pork bones. The soup is rich, yet smooth and easy to drink.
Once you try it, you'll be hooked.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Chikuho Ramen Yamagoya 's Chikuho Ramen.

How to make Chikuho Ramen Yamagoya Soup

Soup ingredients

Day 1
・Water…10ℓ
・Pork knuckles...2kg
・ Pork backbone...1kg


Day 2
・Water…10ℓ
・Bones on the first day
・Chicken bones...1kg
[Commercial Use] Pork White Soup (CP-B8) …2kg

How to make soup

  1. Add water and bones and cook over high heat. Be sure to skim off any scum that appears. Cover and cook over high heat for 8 hours.
  2. Once the bones have fallen apart, let the soup sit.
  3. Use the same ingredients as the soup from the first day, but add new chicken bones and simmer over high heat for 8 hours.
  4. Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add the frozen pork white soup (CP-B8) and dissolve over low heat.
  5. Once the frozen soup has thawed and the flavors have blended well, the soup is ready.

History and origins

Yamagoya, a Ramen restaurant chain with a global presence, was founded in 1969. The parents of founder Masatoshi Ogata ran a gyoza restaurant after returning from Manchuria, China. As an adult, he witnessed the harsh conditions of the restaurant business, but was unable to find delicious Ramen, so Ramen decided to make his ideal Ramen himself and opened Ramen restaurant. Chikuho Ramen is characterized by Kurume's pork bone Ramen with a seafood-based sauce.
