This is a recipe that uses commercial Ramen soup to easily recreate the taste of Ippudo 's Hakata Ramen.
How to make Ippudo soup
Ippudo ingredients
・Water…10ℓ
・ Pig head...3kg
・Knuckles...3kg
・ [Commercial Use] Pork White Soup (CP-B8)... 3kg
・ Garlic...appropriate amount
How Ippudo makes it
- Boil the knuckles in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- The bled pork knuckles and Pig head are placed in a pot and cooked over high heat for eight hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
- Add the vegetables and continue to cook on high heat for 1 hour.
- Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.

History and origins
Ippudo is Ramen founded by Kawahara Narumi in 1985. It is now listed on the stock exchange and spreading Ramen culture around the world. When Ramen shop first opened, Ramen soup was made from 100% Pig head, but now it is said to contain pork Pork knuckle and vegetables as well. Ramen shop was named after the desire to breathe new life into Ramen world in Fukuoka and Kyushu, which was stagnant at the time the shop first opened. They offer the pork bone flavored "Shiromaru Genmi" and the spicy "Akamaru Shinmi." Kawahara was one of the earliest adopters of the philosophy of "spreading Ramen culture to the world," and he not only focuses on making Ramen, but also on raising awareness of Ramen.
