Genki Genki Ippai! 's Hakata Ramen is characterized by its milky white, creamy appearance, and the thick, smooth Pork bone broth has a Light taste aftertaste. It's a rich bowl that barely has any sauce, and makes the most of the mellow sweetness and Umami of the pork bones.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of "Genki Ippai!" Hakata Ramen.

How to make a soup Genki Ippai!

Soup ingredients

Day 1
・Water…10ℓ
・Pork Pork knuckle...3kg
・ Pork backbone...1kg


Day 2
・Day 1 soup...8 liters
・Pork Pork knuckle...2kg
・Chicken bones...500g
[Commercial Use] Chicken and Pork White Soup (CP-M6) …5kg

How to make soup

  1. Add water and bones and cook over high heat. Remove any scum that appears. Cover and cook over high heat for 8 hours.
  2. By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
  3. Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
  4. Once the bones have broken down sufficiently, let it sit overnight.
  5. The next day, leave the soup and ingredients from the first day as they are, add the pork knuckles and chicken bones from the second day's soup, and simmer over high heat for 6 hours.
  6. Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add the frozen chicken and pork white soup (CP-M6) and dissolve over low heat.
  7. Once the frozen soup has thawed and the flavors have blended well, the soup is ready.

History and origins

Founded in 1999 Genki Ippai! is a Ramen shop with no noren (shop curtain) or signboard, only open on days when a light blue bucket is placed in front of the store. Owner Kazuo Doi established the shop on his own, without any training. If you don't drink the Ramen soup first, you'll be kicked out. If you start with the noodles or takana, you'll be kicked out. Cell phones, photography, and reading are also prohibited. The shop has its own unique rules, and it's a fairly challenging place, but the overwhelming deliciousness of Ramen soup has earned it a loyal following. Since 2018, the rules have been relaxed, and photography is now permitted.
