Introduction

This is a recipe that recreates the Yaki Ramen from Kogane-chan, a ramen shop that represents Fukuoka City, Fukuoka Prefecture.
Kogane-chan 's Yaki Ramen is made by grilling vegetables, pork, and thin Hakata Yaki ramen in Pork bone broth and special sauce. Compared to other restaurants' Yaki ramen, this one has a distinctive, thick, black appearance because it is made by pouring the broth from the doteyaki sauce over it. The rich flavor of the pork bones and the doteyaki sauce combine to create a new sensation of "yakisoba x Ramen."

This is a recipe that uses commercial Ramen soup to easily recreate the taste of Kogane-chan 's Yaki Ramen.

How to make Kogane-chan soup

Soup ingredients

・Water…10ℓ
・ Pork backbone...2kg
[Commercial Use] Pork White Soup (CP-B8)... 3kg

How to make soup

  1. Add the bones to the water and cook over high heat. Be sure to skim off any scum that appears. Cover and cook over medium heat for 4 hours.
  2. If the water level drops, add water every hour to maintain the same level. From the fifth hour, continue cooking without adding water until the rice reaches the desired consistency.
  3. Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add the frozen pork white soup (CP-B8) and dissolve over low heat.
  4. Once the frozen soup has thawed and the flavors have blended well, the soup is ready.

  5. Add the boiled noodles and mix until done.

History and origins

Founded in 1968, the food stall "Kogane-chan" in Hakata Tenjin is the birthplace of Yaki ramen. While operating as Ramen stall, the wife of the original owner developed the dish after researching ways to use leftover noodles. It has been popular for many years as a final dish after drinking alcohol.
