How to make Takamiya Shinsui-en soup

Soup ingredients

・Water…5ℓ
・ Katsuobushi...50g
・ Kombu...20g
・Lard...300g
[Commercial Use] Chicken Clear Soup (CP-TC4)... 500g

How to make soup

  1. Soak the water, Katsuobushi, and Kombu for about 10 hours, then add the lard and simmer over low heat for 4 to 6 hours.
  2. Add the [Commercial Use] Chicken Clear Soup (CP-TC4), which will be the base of the flavor, to the stock made in step 1 and dissolve over low heat.
  3. Once the frozen soup has thawed and the flavors have blended well, the soup is ready.

  1. [For commercial use] Dissolve the chicken clear soup (CP_TC4).
  2. Add one dashi packet to 2.5 liters of water and boil over medium heat for 20 minutes.
  3. Combine chicken clear soup, stock, and water.
  4. Add lard, seasoning, and soup to a warmed bowl.
  5. Finally, add the noodles and toppings to complete the dish.

History and origins

Takamiya Shinsui-en en is a long-established Japanese tea shop that also serves Ramen.
The restaurant claims to have been established in 1887, but the recipe for chuka soba noodles has remained unchanged for 50 years, so working backwards, we can assume that Ramen were on the menu as early as the 1970s. Ramen is on the menu alongside mochi (rice cakes), shaved ice, soft serve ice cream, and soba noodles, and is said to be the most popular of all. It's a hidden soul food.
