How to make Hyota soup
Soup ingredients
・Water…10ℓ
・Chicken bones...2kg
・ Pork skin...500g
・ [Commercial use] Chicken and pork white soup (CP-M6)... 3kg
・Vegetable scraps...500g
How to make soup
- Boil the chicken bones and Pork skin in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the bled chicken bones and Pork skin in a pot and simmer over medium heat for 2 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.

How to make it

- Add water to the chicken and pork soup to dilute it.
- Add chicken oil, seasoning, and soup to a warmed bowl.

History and origins
Matsuyama city in Ehime prefecture is home to the sweet "gourd-style" Ramen handed down by "Hyota," which was founded in 1980. There are several Ramen shops in Matsuyama with the character "gourd" in their names, and many of them also serve oden in addition to Ramen.
Boiled pork is soaked in a very sweet char siu sauce and used as Ramen sauce.
