・ Ginger...100g

How to make Shina Soba Sanpachi

  1. Boil chicken bones and knuckle bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
  2. Place the bled chicken bones and knuckles into a pot and simmer over medium heat for 2 hours.

History and origins

Shina Soba Sanpachi in Naruto, Tokushima, which was founded in 1970, is known as the golden soup Tokushima Ramen. This is because the restaurant uses chicken bones, which allow the golden oil to come out of the chicken. As a Tokushima Ramen style, it is said to be somewhere between brown and white Ramen. In fact, many restaurants use not only pork bones but also chicken bones.
