How to make Suehiro Shokudo

  1. Boil the pork bones and chicken bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.

History and origins

Founded in 1950, Jueihiro Shokudo is a Ramen Suehiro Shokudo located in front of Iwakuni Station. It is said that the founder learned how to make Chinese noodles from a Chinese person in Hiroshima, and opened the Ramen restaurant in Iwakuni. Ramen is topped with a generous amount of pork back fat, so much so that the pork bone Shoyu soup is no longer visible. The sweetness of the pork back fat pairs perfectly with the richness of Shoyu, creating a flavor that is perfectly matched. The noodles are boiled to a soft consistency.
It has the flavor of Hiroshima Ramen with the back fat of Onomichi Ramen. The menu mainly consists of Chinese noodles, but also includes Ramen, soba, inari, and rice balls.
