How to make Chuka Soba Ikkyu
- Boil the knuckles in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.

History and origins
The chef, who trained in Ramen in Kurume City, Fukuoka Prefecture, opened a Ramen shop called "Osakaya" in 1949, and from there "Ube Ramen" was born. It is said to be an offshoot of the ramen that he trained at "Sankyu" Ramen. This Ramen recipe was created by the author as an homage to "Chuka Soba Ikkyu", which was founded in 1970. It is said that the name "Chukasoba Ichikyu" was created by combining the character "ichi" (first), which came from his desire to become the best Chuka Soba Ikkyu from the name of the shop where he trained.
The taste of Ube Ramen varies from shop to shop, but what they all have in common is a rich pork bone soup with a strong smell, and medium-thick, soft noodles.
