Suta Honten 's Chinese noodles are one of the oldest in Yamaguchi Prefecture, and the restaurant has a very long history.
The soup at this restaurant is a dark brown, almost black, Shoyu flavor, and while the color of the soup might make you imagine it would have a strong flavor, contrary to its appearance it is not that spicy, but rather Light taste and has just the right amount of sweetness.

How to make Suta Honten soup

Soup ingredients

・Water…5ℓ
・Chicken bones...1kg
[Commercial use] Chicken clear soup (CP-TC4)... 1kg
・ Kombu...20g

How to make soup

  1. Boil the chicken bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
  2. Place the drained chicken bones in a pot and simmer over medium heat for 4 hours.
  3. By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
  4. Add Kombu and continue cooking over medium heat for 4 hours.
  5. Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
  6. Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add frozen chicken clear soup (CP-TC4) and dissolve over low heat.
  7. Once the frozen soup has thawed and the flavors have blended well, the soup is ready.

History and origins

Founded in 1948, Ramen around Tokuyama Station include Suta Honten, Daini Star, and Daisan Star, which are known as star-style Ramen, and serve Shoyu sauce Ramen that is also known as "Tokuyama Black," a Shoyu food for locals. This soy sauce Ramen is deeply rooted in Tokuyama, a port town and hub of heavy chemical industries. Suta Honten is said to have trained in Tokyo before opening a Ramen shop here, and it could be said that the taste of old Tokyo Ramen has evolved in Tokuyama. Inari sushi sets are a standard.
