This is a recipe that uses commercial Ramen soup to easily recreate the taste of Shinkae 's super spicy Tsukemen.
How to make Shinkae soup
Shinkae ingredients (1 serving)
Soup (150ml)
・ [Commercial Use] Chicken Clear Soup (CP-TC4)... 100ml
Dashi (150ml)
・Water…1ℓ
・ Katsuobushi...50g
・Dashi Kombu...5g
Single serving seasoning
・Vinegar...20ml
・ Sugar...10g
・Gochujang...10g
・ Doubanjiang)...10g
・ Chili Pepper...4g
・Sesame seeds...4g
How to make Shinkae
- Soak Katsuobushi and Kombu in water for a day.
- Add the stock from step 1 to the cooled chicken clear soup.
- Combine the other seasonings and soup from step 2 in a bowl.

- Green onion...appropriate amount
How to make it
- [For commercial use] Dissolve the chicken clear soup (CP-TC4).
- Dilute the chicken soup with water.
- Pour the soup mixed with the seasoning into the warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
The super spicy Tsukemen is said to have been created by the owner of Shinkae, which was founded in 1954, after seeing the staff meals made by local Chinese people in China during the war.
It is the origin of a genre of cold noodles, in which vegetables and noodles are dipped in a cold soup made with a combination of Chili Pepper, sesame oil, vinegar, and dashi. It is a Shoyu sauce-based Japanese-style Tsukemen, served with chilled, thin noodles, and is extremely Tsukemen. The spiciness of the dipping sauce can be adjusted; some restaurants allow you to adjust it from 1x to 600x.
