Introduction
This is an introduction to a recipe that recreates Kasaoka Ramen from Chuka Soba Sakamoto, a restaurant that represents Kasaoka City, Okayama Prefecture.
The Kasaoka Ramen at Chuka Soba Sakamoto is flavored with chicken, from the sauce, soup, pork slices, and fat. The light soup, made by slowly simmering savory chicken bones, is topped off with Shoyu that has been added since the restaurant opened, making it so delicious you'll find yourself drinking it over and over again.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Kasaoka Ramen from "Chuka Soba Sakamoto."

・ [Commercial use] Chicken clear soup (CP-TC4)... 3kg
Chuka Soba Sakamoto How to make a
- Prepare the old chicken and cook over medium heat for 2 hours.
- The soup is basically made with chicken only, but some restaurants add Dried sardine or vegetables. If you add dried foods, it's a good idea to add about 200g of Katsuobushi and 20g of dashi Kombu.
- Finally, add the [Commercial Use] Chicken Clear Soup (CP-TC4) to add richness, bring to a boil and it's done.

History and origins
"Kasaoka Ramen" is a Shoyu-flavored Ramen topped with chicken "kashiwa char siu." The area around Kasaoka is the largest poultry farm.
The poultry industry was thriving, with around 300 farms said to have been there, and old chickens that had stopped laying eggs were readily available. Also, with a background of familiar noodle culture, it is said that Kasaoka Ramen was born as a casual meal for the locals.
Founded in 1958, "Chuka Soba Sakamoto" is the oldest Ramen shop still standing, and uses only chicken for its Ramen soup. It is a direct descendant of "Saito," a Ramen shop that was founded before the war and is said to be the originator of "Kasaoka Ramen."
It is said that there were over 10 Ramen restaurants in Kasaoka in the 1940s, and Ramen was so popular that people would get off the train just to eat Kasaoka's Chinese noodles.
