How to make Chuka Soba Fujiya

  1. To make soup ①, put pork knuckles in water and simmer over high heat. Simmer for 5 hours, carefully skimming off any scum that appears.
  2. Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add frozen pork clear soup (CP-BC6) and dissolve over low heat.
  3. Once the frozen soup has thawed and the flavors have blended well, soup ① is ready.
  4. To make soup ②, add the ingredients and simmer over high heat for 2 hours.
  5. Mix soup ① and ② together and it's done.

History and origins

Founded in 1950, Chukasoba Fujiya was a udon and zenzai restaurant founded by Suemoto Yorio, but three years later, sensing the popularity of chukasoba, it converted into a chukasoba specialty restaurant. At the time, it was a bustling spot in a shopping district crowded with movie theaters and pachinko parlors. It serves Light taste, tonkotsu (pork bone) based Shoyu Ramen. Next to Ramen shop is Asazuki Honten, which was founded by Ueyama Masayoshi in 1948 and is said to be the oldest surviving Ramen shop in Okayama. Asazuki Honten serves milky white tonkotsu (pork bone) based Ramen. Their popular dish is katsu soba, topped with freshly fried pork cutlet.
