How to make Tenjin Soba

  1. Put the old chicken into a pot and sprinkle salt all over it. Add the momiji (chicken leg part) on top and sprinkle salt all over it.
  2. Add water and cook on high heat for 2 hours.
  3. Don't simmer it for more than three hours, and add more old chicken if the soup runs low. Crush the bones as needed to extract the broth.
  4. Once the bones have been broken down, they will form the base of the flavor. [For commercial use] Add frozen chicken white soup (CP-T10) and dissolve over low heat.
  5. Once the frozen soup has thawed and the flavors have blended well, it is ready.

History and origins

Founded in 1970 Tenjin Soba is a leading Ramen restaurant that attracts customers from all over the country. Its menu only offers Tenjin Soba. However, there are various options available, such as "Niku-nuki" (no meat) without char siu (roasted pork, roast pork, or braised pork), "Niku-nuki with egg" (no meat, but with egg) without char siu (roasted pork, roast pork, or braised pork), "Large serving" and "Two servings" (double the noodles). The traditional way to eat it is to add the coarse chili Chili Pepper and pickled radishes that are available on the table. The oldest Ramen restaurant in Okayama Prefecture is said to be Asatsuki Honten, founded in 1948. Next is Fujiya, founded in 1950. Both Asatsuki Honten and Fujiya use Ramen soup based on pork bone broth, while Tenjin Soba is based on chicken broth.
