Introduction

This is an introduction to a recipe that recreates Omi Champon from Chanpontei Sohonke that represents Hikone City, Shiga Prefecture.
The Omi Champon at Chanpontei Sohonke has a Light taste soy sauce flavored soup based on Kyoto-style dashi, and the noodles are not champon noodles but homemade Chinese noodles made with kansui (alkaline water).
The soup is Light taste in taste, but the umami of the vegetables is infused into it, making it an excellent soup that you will never tire of, no matter how much you drink!
We recommend adding a splash of vinegar at the end. This is a different version of the Nagasaki style, so be sure to try the most popular local dish, Omi Chanpon.

History and origins

Founded in 1963, "Chanpontei Sohonke" is the originator of Ramen (champon), and originally started as a small restaurant called "Menrui o Kabe." While there were many noodle dishes such as udon and soba, from around 1986 they began to specialize in champon in an effort to popularize it, and in 1988 opened a specialty restaurant called "Chanpontei."
Now, the "Omi Champon" trademark has been registered, the "Omi Champon Association" has been established, and efforts are being made to popularize the dish.
Instead of stir-frying in Frying pan, this light and refreshing champon is simmered in a pot, Light taste the flavor of the meat and vegetables.It is also notable for not including seafood, and you can enjoy the change in flavor by adding vinegar halfway through the dish.
