Introduction
This is an introduction to a recipe that recreates Banshu Ramen from Nishiwaki O-hashi Ramen in Nishiwaki City, Hyogo Prefecture.
Nishiwaki O-hashi Ramen 's Banshu Ramen looks like a traditional Shoyu Ramen, but it has Ramen strong sweet taste. This sweetness comes from the homemade sauce made with apples, Onion, and sweet Shoyu. This richly sweet Shoyu is combined with Double soup stock made from chicken bones and pork knuckles, resulting in a traditional, Light taste sweet, and very delicious Shoyu Ramen.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Banshu Ramen from Nishiwaki O-hashi Ramen.
How to make Nishiwaki O-hashi Ramen soup
Ingredients for Nishiwaki O-hashi Ramen
・Water…10ℓ
・Chicken bones...2kg
・Pork knuckles...1kg
・ [Commercial Use] Pork Clear Soup (CP-BC6)... 3kg
・ Onion...300g
・Carrot…200g
・ Garlic...100g
・ Ginger...100g
How to make v Ramen
- Add chicken bones and pork knuckles to water and cook over high heat. Remove any scum that appears.
- Add the vegetables and cook over medium heat for 3 hours.
- Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.

How to make it
- [For commercial use] Dissolve the pork clear soup (CP-BC6).
- Dilute the pork clear soup with water.
- Pour the seasoning, lard, and soup into the warmed bowls.
- Add the noodles and toppings and it's done.

History and origins
Banshu Ramen was born in a yatai around 1950-60, with a sweet Shoyu taste Ramen. The origin of this sweetness is said to have been arrived at as a result of the ingenuity of the women workers who were said to have numbered more than 20,000 when the textile industry was once flourishing, in order to make it Ramen to their liking. On the other hand, there are those who say that it was simply sweet Ramen before.
Ohashi Ramen" founded in 1948, "Nishiwaki O-hashi Ramen" founded in 1957, and "Ramen Shibakawa" which the founder of "Nishiwaki O-hashi Ramen" changed the location and opened again in 2000 are said to be the three major Banshu Ramen
