This is an introduction to a recipe that recreates the Chinese noodles from "Chuka Soba Sumiyoshi," a restaurant that represents Takaida Village, Osaka Prefecture (now the northwestern edge of Higashiosaka City).
The ramen at "Chuka Soba Sumiyoshi" is characterized by its thick, straight noodles in a rich Shoyu-flavored soup made mainly from chicken bones. In fact, legend has it that the flavor has gradually become stronger in response to customer requests, resulting in the current flavor.
The rich umami of Kombu can be felt prominently in the Shoyu-flavored soup, and when mixed with the extra-thick noodles, it's so delicious you won't be able to stop eating! Please come and try this "legendary Ramen" that has people lining up to get in.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Chuka Soba Sumiyoshi 's Chinese noodles.
How to make "Chuka Soba Sumiyoshi"
Ingredients for Chuka Soba Sumiyoshi
・Water…10ℓ
・Chicken bones...2kg
・ [Commercial use] Chicken clear soup (CP-TC4)... 2kg
・Dashi Kombu...30g
・ Ginger …20g
・ Garlic...10g
・ Black Pepper...4 grains
How to make Chuka Soba Sumiyoshi
- Boil the chicken bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the drained chicken bones in a pot and simmer over low heat for 2 hours.

History and origins
Takaida Ramen is a type of Ramen that originated in 1945 when many Ramen shops opened around the Takaida bus stop in Osaka. It is characterized by its thick, straight noodles combined with a chicken stock and Kombu broth. The toppings, such as char siu (roasted pork, roasted pork, or braised pork), green onions, and bamboo shoots, are also almost the same at each shop.
Many popular Ramen restaurants lined the streets around the Takaida bus stop, including Koyoken, which opened in 1953, and Chuka Soba Sumiyoshi, which opened in 1956. The founder of Sumiyoshi was Yoshiro Inazumi. The two middle characters of his name were used to create the name of Ramen shop. Even now, Ramen 's flavor is still being passed down through the family.
