How to recreate the original Ramen from "Marudebu Sohonten"
Introduction
This is an introduction to a recipe that recreates the original "Rairai-ken" style Ramen from "Marudebu Sohonten in Gifu City, Gifu Prefecture.
Ramen at Marudebu Sohonten has a very Light taste tasting soup, with the umami Umami of Katsuobushi and Shoyu sauce coming to the forefront and almost no oiliness.
Its familiar, gentle, comforting, and mysterious taste makes it a one-of-a-kind, precious cup that you won't find anywhere else.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Ramen original "Rairai-ken" style Ramen from "Marudebu Sohonten."
How to make "Marudebu Sohonten"
Ingredients for "Marudebu Sohonten"
・Water…10ℓ
・Chicken bones...1kg
・Pork bones...300g
・ [Commercial Use] Chicken and Pork White Soup (CP-M6) …2kg
・ Onion...2 pcs
・ Ginger …2 pieces
・2 cloves of garlic
How to make "Marudebu Sohonten"
- Boil chicken bones and pork bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Put the bled chicken bones and pork bones into a pot and simmer over high heat for 2 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.

How to make it
- [For commercial use] Dissolve the chicken and pork white soup (CP-M6).
- Dilute the chicken and pork soup with water.
- Pour the soup mixed with the seasoning into the warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
Founded in 1917, Marudebu Sohonten is a Ramen shop opened in its hometown by owner Fusajiro Kamiya, who trained at Rairai-ken, Japan's first Ramen specialty restaurant, which opened in Asakusa, Tokyo in 1910. It's said that the shop got its name from the owner's obese appearance. It started as a Ramen stand, then opened a restaurant, but it burned down during the war and was rebuilt to become the current store. Today, it's a valuable Ramen shop where you can trace the origins of Japanese Ramen. The menu only offers two types of Ramen: Chinese noodles and Wonton, preserving the traditions passed down through generations.
