Introduction

This is a recipe that recreates the vegetable Ramen from "Hachiban Ramen" a representative restaurant in Kaga City, Ishikawa Prefecture.
The vegetable Ramen at "Hachiban Ramen" has a refreshing, warm soup base, and is mellow and gentle with plenty of sweetness and umami from vegetables such as Cabbage, carrots, Onion, and bean sprouts. Cabbage in particular is so delicious you won't be able to stop eating it. With Cabbage being the perfect ingredient for 8ban Ramen, you can be sure it's delicious!
This is a recipe that uses commercial Ramen soup to easily recreate the taste of "Hachiban Ramen" vegetable Ramen.

How to make "Hachiban Ramen"

Ingredients for Hachiban Ramen

How to make Hachiban Ramen

  1. Boil the pork knuckles in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
  2. Place the drained pork knuckles in a pot and cook over high heat for 2 hours.
  3. By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
  4. Add the vegetables and cook over medium heat for 2 hours.

History and origins

Established in 1967 along National Route 8 in Kaga City, Ishikawa Prefecture, is "Hachiban Ramen" by owner Goto Choji. At the time, there was an instant Ramen boom, and with only one Ramen specialty store in the three cities in the area, he had an intuition that there was a business opportunity, so he founded the restaurant. He consulted with a local celebrity who told him, "Ramen topped with vegetable salad would be good. Make it Ramen with added value." This person then introduced him to Ramen restaurant in Aomori, who taught him the recipe, and he created the flavor. After opening Ramen restaurant, he received many complaints and temporarily closed 15 days after opening. After reopening after addressing complaints such as the ramen being too salty and oily, the restaurant quickly became a huge success.
At the time, a bowl Ramen was sold for 100 yen, but the going rate for Ramen on the market was around 70 yen. Nowadays, it is considered cheap Ramen, but at the time it was Ramen, and yet it was still popular. This Ramen, topped with plenty of stir-fried vegetables, was so popular that 1,300 bowls were sold out a day at 25 seats. As a result, they received many requests to open a branch, and in 1967, the year they were founded, they quickly expanded into franchising. It is said that the trigger was when they happened to come across an article about McDonald's franchises in the United States. The catchphrases for "Hachiban Ramen" which can be said to be the soul food of Ishikawa residents, are "Health is key" and "Why No. 8?" Instead of naruto, it is topped with "hachikama," Kamaboko fish cake) with the number "8" on it, which is the symbol of "Hachiban Hachiban Ramen."
As of 2019, it is a major Ramen chain with 121 stores in Japan (112 of which are in the three Hokuriku prefectures) and 134 overseas (129 of which are in Thailand). As of December 2022, the number has expanded to 115 stores in Japan (106 of which are in the three Hokuriku prefectures) and 154 overseas (150 of which are in Thailand). Incidentally, the opening of "Hachiban Ramen" in Thailand was the result of an enthusiastic request from textile company Thai Nam Singh. Despite repeated refusals due to low prices and other factors, the company still wanted to open a store, and a contract was concluded based on the following basic conditions: 1. The flavor of "Hachiban Ramen Hachiban Ramen in Japan would be preserved. 2. The name would remain the same. 3. The target audience would be Thai people, not Japanese businessmen in Bangkok. 4. The noodles and dumplings would be manufactured locally and sold in supermarkets and for commercial use.
