History and origins

Around 1953, many Ramen stalls began to appear in front of the station, and people would gather there every night. In the 1960s, the stalls moved along the national highway, and the number Ramen served in restaurants increased, attracting tourists and truck drivers, and the area came to be known as Ramen Highway. This method of preparation was created by Nishio Ryoichi as an homage to the Ramen shop "Ichiriki," which started as a Ramen stall in 1961 and opened a store in 1977. This paitan-style soup is said to be the foundation of modern Tsuruga Ramen. "Ichiryu" in Tokyo is a ramen shop that follows in this Ramen.
