How to make Muteppo

  1. Add the bones to the water, cover and cook over high heat.
  2. Do not skim off the scum. At first, it will have an unpleasant odor, but if you continue to cook it over high heat, the odor will become sweeter and it will become creamy. Cook for about 7 hours.
    Normally, some of this No. 1 dashi soup is added to No. 2 dashi soup. You can also add No. 2 dashi soup to No. 3 dashi soup, and depending on the taste, aroma, and consistency, you can add bones (pork bones, such as pork Pork knuckle or Pork backbone), and continue cooking until you reach your desired flavor.
  3. The soup served that day is made by adding [Commercial Use] Rich Pork White Soup (CP-B10) to stabilize the flavor before serving.

History and origins

The rich tonkotsu ramen is made with only high-quality pork bones and water by Akasako Shigeyuki, founder of Ramen shop Muteppo, and is packed Ramen Collagen. Muteppo was founded in 1998. The owner originally trained at Furaiken in Miyazaki Prefecture before opening Ramen shop in Nara. Ramen soup stock is made with over 300kg of pork bones a day, and the shop is known for its high concentration, but the customer service is excellent and the staff are happy to adjust the flavor. The shop has won numerous awards in the pork bone category in Ramen popularity polls. Ramen shop was founded in Nara Prefecture and relocated to Kyoto Prefecture in 2003.
