How to make "Hobu" mustard soba
Ingredients for Hobu
・Noodles...1 ball
・Water…150cc
・ [Commercial Use] Chicken White Soup (CP-T10) …150g
・Mustard sauce...30g
・ Koikuchi Soy Sauce...15g
・Vinegar...5g
・ Umami seasoning...1g
・Powdered mustard...10g
[Bean paste]
・Chicken...30g
・Small shrimp...7 pieces
・ Dried shiitake...1 piece
・Lettuce...1/4
・Combined seasoning...15g
・ Shoyu...150ml
・Vinegar...15ml
・ Sugar …4g
・Salt...2g
・ Umami seasoning...2g
・Potato starch dissolved in water...appropriate amount
How to make Hobu
- Once the noodles are boiled, coat them thoroughly with the mustard sauce in the pot.
- Stir-fry the chicken, shrimp, Dried shiitake, and bamboo shoots, then add all the seasonings and bring to a boil. Add the water-dissolved potato starch to make the filling. Add the lettuce last and cook briefly.
- Add chicken white soup to the soup to bring out the rich flavor of the stock, then bring to a boil and the soup is ready.
- Pour the soup and bean paste on top of the noodles.
History and origins
Founded in 1971, Tenka Ippin is Ramen invented by Tsutomu Kimura. It is made from chicken and 11 kinds of vegetables, and the recipe is closely guarded. Of course, the above recipe is just an example, but Ramen soup is quite rich, yet not too heavy thanks to the vegetables.
Starting out as a food stall, he says that he arrived at this flavor through repeated pursuit of making truly delicious Ramen without imitating others. In any case, it is said that he arrived at this flavor through prolific work. Everyone was amazed and impressed by the flavor of Ramen, and now he has become an extremely popular Ramen shop with over 200 branches nationwide.
